I like eggplants but dislike the amount of grease it usually absorbs so I came up with this easy and light way to enjoy eggplants minus the calories.
This is one of my favorite dishes to make anytime. It’s great to pack for lunch or dinner. I also make it often during the month of Ramdhan and keep the chicken in the fridge for a quick midnight snack, Iftar on-the-go or even sahoor. I usually use a large French baguette for the bread and but I recently found individual-sized baguettes so I use them instead. Continue reading
