I have writer’s block today, so all I can say is take a look at my latest and recent obsession. Enjoy!
Place half a red onion, 1-2 jalapeno peppers and a handful of parsley leaves in the bowl of your food processor. Process using 5-second pulses and take care not to over process, you want the final results to look like you just chopped it using your sharpest knife.
Alternately, finely chop the aforementioned vegetables using the old-fashioned knife and cutting board.
Cut the avocados in half and spoon out the flesh into a medium bowl.
Add 2-3 tablespoons of lemon or lime juice and mash the avocados with a fork.
Add the chopped vegetables …
Mix and sprinkle some salt and pepper.
Then spoon into a dipping bowl …
Eat with tortilla chips
Guacamole
2 ripe avocados
1 small or 1/2 large red onion
1-2 jalapeno pepper
A handful of cilantro or parsely leaves
2-3 tablespoons lemon or lime juice
Salt and pepper
Method:

- Cut the avocado in half and spoon the flesh out into a medium bowl.
- Add the lemon/lime juice and mash the avocodo with a fork.
- Mix in the chopped vegetables, salt and pepper.
- Spoon into dipping dish and serve with tortilla chips.
- Enjoy!
Varations:
- Substitute green onions for red onions.
- Add a finally chopped tomato to the mix.
- Add a tablespoon of vinegar at the end for an extra flavor.
- Mix in sour cream for a creamy dip.






I must confess to you that, until just this moment, guacamole was on my “not today” list. After reading this sumptuous post, however, I’m just dying for a bowl. How do you manage to make even the greenest of foods look so delicious??
Actually, I love the touch of purple in this dip. Do the onions give the guacamole a distinct taste that tomatoes wouldn’t? Could you use both onions AND tomatoes to make a colorful “It’s party-time!” guacamole?

Okay, I must clear a confusion: people usually add red onion and tomatoes together, they don’t replace each other. I didn’t add tomatoes because I imagined it would turn into a watery-mush but it’s definitely on the list! And, yeah, I love the “purple” from the “red” onion. Do try it soon!

Hi, Now this is a recipe I can certainly relate to since I’m the official Guacamole Chef in my house. However, I usually use white onions and not super finely chopped tomatoes and red chilly pepper (substituting the jalapenos). Also, in my opinion the lemon juice makes it taste way better than vinegar would (it’s healthier too). Adding sour cream?? Never tried it before but certainly will. For the record, guacamole has been my obsession way since way back and it is really delicious (specially when I make it:). Don’t stop the good work! Keep it coming.

This looks amazing, however, I’m quite sensitive to onion smells and tastes, so are there any other yummy substitutes for the onion? Or can I put a smaller amount? Write back soon, Zay, I’m dying to know?
